Google Talk will launch your web browser with an email automatically addressed to your Gtalk contact. Complete the email as you would normally and press "Send." You have now sent an email to your Gtalk contact.

A Warning About Sending Email from Google Talk
If you use Gtalk on a shared computer, whether in a public location or within your home, be aware sending email from the IM client could give other users access to your Gmail account.
If you are not previously signed in, Gtalk will sign in for you as it opens the message window in your browser. Make sure to sign out of Gmail after sending your message by clicking your name in the upper right corner and selecting "Sign Out" from the drop-down menu.
